Nicolas Jaeger also feels a connection to the philosophy: Every year, he ensures the excellent quality of the products with a rigorous selection of grapes from mainly Premiers and Grands Crus sites. The base wines of the Champagne grape varieties Chardonnay, Pinot Noir and Pinot Meunier are obtained exclusively from the first pressing. The first fermentation takes place in 228l oak barrels. The use of wood favours gentle micro-oxidation. Therefore, the champagnes are characterised by a vinous character and are thus very storable.

In addition, malolactic fermentation is not used in the production process. This in turn preserves the unadulterated aroma profile of the grape as well as the typical characteristics of the soil. The wines thus retain their freshness for a long time.
