Champagne Piollot
The Piollot winery is located in Polisot, a tiny village in the Aube and is run by Roland Piollot and his wife Dominique Moreau, who is also the owner of the prestigious Marie Courtin winery. For more than 50 years, Roland Piollot’s family has tried to bring out the authentic terroir of the vineyards and plots, all located in Polisot.
During this time, they have not renewed the vines in the vineyard by buying new clones, but they have selected certain vines with positive characteristics in the existing vineyard and taken offshoots from them. Among them were some very old vines of the Pinot Blanc variety, which 99% of all winegrowers sorted out long ago and converted into vineyards for Pinot Noir, Chardonnay and Pinot Meunier. In the meantime, the so-called Forgotten Vines are coming back strong.
The winery has been certified organic since 2009. It is extremely important to maintain the natural health of the vines. In recent times, the aging of the base wines in wood was added and only naturally produced yeasts are used. Roland and Dominique want to create a holistic system in which vines and terroir can express themselves as it comes out of nature itself and as it is typical of the Côte des Bar region.
