We elaborate Champagne wines in our own way, by doing what we think to be right.
Our convictions are forged by the special attention payed to the winegrowing landscapes and moderate experimentation, without dogma or direction.
We are patiently and confidently moving forward with regard to our crafted vines and wines, driven by the determination to achieve precision at all levels of production. Year after year, we as winegrowers keep to a clear and straight path, in view of elaborating silky and ethereal wines, reflecting our freedom of choice. It is in this spirit that we share our Champagnes through a refined art of living shaped by generosity, conductive to interactions pulsated with a certain elation.
Domaine POUILLON is a family garden, founded in 1947 by Fabrice’s grand father :Roger Pouillon. Our Domaine is established in Mareuil-sur-Aӱ, village of Vallée de la Marne’s terroir.
Fabrice arrived in 1999 : this vintage is my 25th harvest ! Fabrice works with his wife Bénédicte and 3 employees. This is pinot noir terroir – some of the best – hinged to the banks of the Marne River, facing south. Our 8ha are planted on both sides of the Marne Valley, principally Mareuil-sur-Aӱ and Aӱ, but also Avenay, Epernay, Festigny, Mutigny and Tauxières. à 65.000 bottles. Our exploitation is dispersed across 45 parcels – mostly planted to pinot noir (65%) and chardonnay (15%) and 20% of meunier.

- Fractionned traditionnal Press « Coquard » 4.000kg = we press four to five times to release juice in ‘fractions’ = “respects the anatomy of each berry”

- Vinification
- Barelling by gravity
- Alcoholic + malolactique fermentations
- Vinification in oak barrels (from new to 10 wines old)
- Indigenous yeasts : selected each vintage by a laboratory
- Stirring of lees
- Oak barrels ; 75-hl French oak casks for Perpetual Reserve and our Solera ( wines dating back to 1997)
- Parcellaires are closed with natural cork
Our « Méthode Fabrice Pouillon » is 20 years old !! An exclusive and original method without the addition of external sugars = no saccharose !!
Boosted at once by our experience and experiments, we have therefore sought to obtain bubbles without the addition of sucrose. In 2004, after many years research, we managed to fine-tune our very own carbonation process by working exclusively with the natural sugar of our grapes. This method is quite simply the natural link between the first and the second fermentation.
